The 0.078 inch grease limit, and why the wording matters

NFPA 96 sets the acceptable grease depth at 0.078 inches, roughly 2 mm, and applies that ceiling to any surface in the exhaust path rather than to the system on average.

Two millimetres sounds generous written down. On a working cook line it is thinner than most operators picture, and a busy system reaches it faster than anyone plans for. It is roughly the thickness of a stack of two credit cards, and it is enough deposit to sustain a fire travelling inside a duct.

The phrase doing the real work in that sentence is any surface. The limit is not an average taken across the system, and it is not applied to whichever section looks worst from the pass. It applies at every point in the path. A canopy polished back to bare stainless does not offset a plenum cavity that has not been opened in a year, and neither one offsets a blower wheel carrying deposit on the trailing edge of every vane.

That is why measurement happens where grease actually collects, not where it is easiest to reach: at the plenum, inside the duct at an access panel, and at the fan. How the Ontario Fire Code adopts NFPA 96 by reference

Adoption by reference means the Ontario Fire Code does not reprint the technical requirements, it points at the published standard, and the requirements in that standard become the ones enforced in Ontario.

This is the part Ontario operators most often get wrong, usually expensively.
